This sugar-free, dairy-free, nut-free, oil-free, raw energy bar recipe by Kristina Carillo Bucaram, author of a best-selling raw food cookbook, is quick, easy and perfect for breakfast or a snack to take with you wherever you go.
1-2 cups dried mulberries
2 cups dried figs
2 cups pitted dates
1-2 teaspoons freshly ground cinnamon
Place all ingredients in a food processor and pulse until the mixture reaches a cookie dough consistency.
Cover a pyrex with cooking paper and place the mixture on top, spreading it so that it takes the form of the pyrex. Slice the mixture into bar chunks to make energy bars.
Place in the fridge for at least 30 minutes so that they harden.OPTIONAL ADD-ON: Blend 2 cups of pitted cherries and 1 cup of pitted dates until smooth. Drizzle over the energy bars for added sweetness.
