Oats have lots of fiber so they’ll keep you fuller longer, coconut is packed with iron and zinc, peanut butter is a great source of energy, dark chocolate is an antioxidant, honey is a natural antibiotic, and chia seeds are a super food with a huge list of benefits, including being high in protein, fiber, and omega-3.
1 cup oats
⅔ cup shredded coconut
½ cup peanut butter
½ cup mini dark chocolate chips
⅓ cup honey
1 tbsp chia seeds
1 tsp vanilla extract
- Spread the shredded coconut on a baking sheet and bake at 180-200 degrees, stirring occasionally, for 10 minutes or until the coconut begins to change color. Remove from the oven and let cool for a few minutes.
- Combine all ingredients in a large bowl.
- Roll and compress the mixture into small balls and place on parchment paper.
- Refrigerate for a few minutes until firm. Enjoy with a cup of coffee.
Transfer the remaining pieces into an air tight container and keep in the fridge. They’ll be good for up to a week.
