Peanut Butter Oat Bites

If desserts are your weakest point and they continually spoil your healthy eating streak, try this easy-to-make, sugar-free dessert that is packed with nutrients and health benefits. Oats have lots of fiber so they’ll keep you fuller longer, coconut is packed with iron and zinc, peanut butter is a great source of energy, dark chocolate is an antioxidant, honey is a natural antibiotic, and chia seeds are a super food with a huge list of benefits, including  being high in protein, fiber, and omega-3.


1 cup oats

⅔ cup shredded coconut

½ cup peanut butter

½ cup mini dark chocolate chips

⅓ cup honey

1 tbsp chia seeds

1 tsp vanilla extract


  1. Spread the shredded coconut on a baking sheet and bake at 180-200 degrees, stirring occasionally, for 10 minutes or until the coconut begins to change color. Remove from the oven and let cool for a few minutes.
  2. Combine all ingredients in a large bowl.
  3. Roll and compress the mixture into small balls and place on parchment paper.
  4. Refrigerate for a few minutes until firm. Enjoy with a cup of coffee.

Transfer the remaining pieces into an air tight container and keep in the fridge. They’ll be good for up to a week.
