Winter Roasted Veggies


Make the best of seasonal winter vegetables with this super-easy recipe. Feel free to personalize it with your preferred vegetables or spices and enjoy!

 

Ingredients:

Brussels sprouts

Onions

Sweet Potato

Broccoli

Cauliflower

Zucchini

Eggplant

Carrots

Olive oil

Salt and pepper to taste 

Directions:

Wash, peel, and chop the vegetables and place in a large, oven-safe tray. Drizzle with olive oil and sprinkle with salt and pepper to taste. Roast in the oven for 20-25 minutes at 180-200° (the exact time and degree depends on the oven). Turn the vegetables once or twice to make sure they are evenly roasted.
