Chia Seeds Pudding Recipe

Chia seeds are super foods with very high calcium, omega-3, and antioxidants (to read more about the benefits of adding chia seeds to your diet, see our previous post). Making a simple and delicious chia pudding is a quick and easy way to pack in all the nutrients of this amazing food.


2 cups coconut milk

½ cup chia seeds

½ teaspoon vanilla extract

¼ cup (or less) maple syrup


Place all the ingredients except for the chia seeds in a blender and blend until smooth. If you want to add some fruits or chocolate, add them in as well (see notes). Then whisk in the chia seeds.

Pour the mixture into a jar or glass container and keep in the fridge for at least 4 hours. The best way to eat this pudding is to leave it in the fridge overnight and have it ready for breakfast or as a sweet snack for the next day.


If you don’t like maple syrup, swap it with stevia or honey.

If you want to keep the coconuty flavor of the pudding and you’re in no need for more sweetness, then don’t add in maple syrup or a substitute.

If you’re not big on vanilla, replace it with ¼ cups cocoa powder or ½ cup fresh strawberries.
