Whether you’re looking for an easy and healthy recipe or you’re in need of filling your body with some powerful nutrients and antioxidants, this flavorful salad will do the trick. The vegetables in this salad are packed with Vitamins K, A, C, B6, folate, and fiber, which help cleanse your body, lower cholesterol, regulate blood sugar, and strengthen your immune system. Plus, walnuts are a great source of omega-3 and you get all the healthy fats that you need from avocados.
Ingredients (serves 6):
For the salad:
2 cups kale (thinly sliced)
2 cups red cabbage (thinly sliced)
2 cups broccoli florets
2 large carrots (peeled and grated)
1 red bell pepper (sliced into matchsticks)
2 avocados (peeled and diced)
1/2 cup fresh parsley (chopped)
1 cup walnuts
1 tablespoon sesame seeds
For the dressing:
1/3 cup grapeseed oil or olive oil
1/2 cup lemon juice
1 tablespoon fresh ginger (peeled and grated)
2 teaspoons whole grain mustard
Salt to taste
Add the kale, cabbage, broccoli, bell pepper, and carrots to a large bowl.
Whisk together all the ingredients for the dressing in a separate bowl.
Pour the dressing over the salad and toss until everything is coated.
Add the parsley, avocado, sesame seeds and walnuts, and toss again.
